IGT Passito Tuscan Wine
In Tuscany passito wines are a tradition that has been handed down since the Middle Ages. The Fontanelli family , expert in the difficult art of the long ageing in kegs after the drying and the pressing of grapes, has been producing its passito since 1919. As it is known, passito wine can have different levels of sweetness, from dry to cloying. In Sole della Fenice is handed down from the past the Fontanelli family’s choice for a perfectly balanced passito wine, that is neither “too sweet” nor “too dry”.

HARVEST

DRYING
Before the processes in the cellar, the grapes are placed for about three months in a cool and ventilated room called “appassitoio” where the drying process occurs naturally.
WINE-MAKING
Soft pressing followed by alcoholic fermentation in kegs
COLOUR
Amber yellow with golden reflections
ALCOHOL BY VOLUME
16-17° (depending on the vintage)
AGEING
5 years in kegs and resting, for at least one year, in bottles
TASTING
Strong and of great complexity, on the nose it boasts notes of dried yellow flowers and dried fruit, in particular walnuts, almonds and hints of honey, which are then reflected also on the palate.
PAIRING
Pastry desserts, Prato cookies, blue veined cheeses. Ideal also alone, as a meditation wine.
