THE CELLAR
WITH THE PHOENIX

The family coat of arms stands out on the facade of the villa. Here the Phoenix, a mythological bird universally recognised as a symbol of resilience, is depicted in the moment of its rebirth.

Also known as the “bird of fire”, this bird is famous for its legend. The first mention of the Phoenix can be found in the Bible, in the book of Exodus, and it was well known to the peoples of antiquity, from Egypt to China, and is mentioned by Herodotus, Ovid, Tacitus and Metastasius.

What all these stories share is that every 500 years the Phoenix regenerates from its own ashes and in every culture and civilization it is associated with strongly positive connotations: new life, energy, strength, purity, etc.

As a tribute to the family’s coat of arms, it seemed natural to dedicate our wines to its mythological protagonist, therefore calling red, white and passito respectively “Fire of the Phoenix”, “Dawn of the Phoenix” and “Sun of the Phoenix”.

OUR WINES

The winery offers three wines that share the same strong Tuscan identity: in all of them you can breathe the elegant and warm atmosphere of the hills of Val d’Elsa described by writers and artists and visited by wine and food experts.

A white wine with a double soul: fresh and at the same time full-bodied. In this version, the two Tuscan vines Trebbiano Toscano and Vermentino meet the international versatility of Chardonnay.

IGT Passito Tuscan Wine

In Tuscany passito wines are a tradition that has been handed down since the Middle Ages. The Fontanelli family , expert in the difficult art of the long ageing in kegs after the drying and the pressing of grapes, has been producing its passito since 1919. As it is known, passito wine can have different levels of sweetness, from dry to cloying. In Sole della Fenice is handed down from the past the Fontanelli family’s choice for a perfectly balanced passito wine, that is neither “too sweet” nor “too dry”.

OLIO DEL PETRICCIO

Even for this product Paolo is guided by a centuries-old tradition. Ancient documents prove the presence of olive trees at Il Petriccio since the fifteenth century and this cultivation has continued over the years until today.

Olio del Petriccio comes from strictly native cultivars such as Frantoio, Leccino and Pendolino and is remarkable for its bright green-gold colour, intense aroma with fruity hints of green apple, with herbaceous notes and a fine flavour, delicately spicy and fresh.

ACETO DEL PETRICCIO

Aceto del Petriccio draws its high quality from the white wine used and on the palate it boasts a pleasantly sour taste combined with a hint of softness that makes it versatile for various recipes, including the typical Tuscan Panzanella, boiled vegetables, salads, sauces, and all meat and fish recipes.
